ONION SOUP

10 onions
3 carrots
1 teaspoon salt
1/4 c. soup barley
2 teaspoon miso or tamari
enough grated cheese

ONIONS cut onions in thin slices about 18 in. thick use enough to fill heavy soup pot 2/3 full, saute in the pot 10 min., saute means to oil the pan enough to cover the bottom and to fry while occasionally stirring. Then add enough water to almost fill the pot without boiling over. 

CARROTS grate the carrots into a bowl and toss into the pot.

BARLEY Wash kernels and throw into the pot. Barley makes it creamy if you add it right away.

SEA SALT Add 1 teas. maybe some later to taste.

MISO OR TAMARI These just add flavor near the end if it's time to eat and the soup doesn't taste good. Also miso is yang, like meat. If you don't eat meat it's good to eat miso so you don't go into the nuts and berries zone. Let it cook for at least 20 more min.

All together it should cook at least 3 to 4 hours adding more ingredients if necessary.

TO EAT Grate some very tasty cheese over the top of your hot bowlful. The cheese will melt and be like cheese noodles.
